Our pre-brewing checklist is quickly dwindling down. As we blogged last week all our equipment is in the building. Yesterday, our boiler passed its start-up inspection flawlessly, which was one of the last hurdles. Barring any last minute surprises, installation will be finished this week.
Last week we also mentioned that we had not yet received our license from the state Alcohol Beverages Control Commission. Our response was took longer than their original time-line had suggested, which caused us no shortage of worry. However, on Tuesday we finally received confirmation that we had been granted our Farmer-Brewery license. Despite the stress we felt as we waited for their response everything went through without a problem.
All this means that we will be brewing very soon. Our current plan is to brew a special red lager first, then follow it up the next day with a double batch of our Saxon Sons Pilsner. This will allow us to learn the particulars of our system before we brew one of our core beers. From here we will be brewing once a week.
