Brew the Czech way!
Jan Kašpar is considered a pioneer in Czech aviation, airplane design, construction and engineering. We paid homage to him with Co-Pilot: Kaspar, a Beer Hall Only Czech Style Dark Lager. Drawing inspiration from traditional Czech lager brew methods, Kaspar was primarily fermented in an open Wood fermenter about a week. We then racked it into a stainless steel fermenter for secondary fermentation and conditioning. We do this so the beer isn’t affected by oxidation once the fermentation slows way down. We transfer it to another tank so we can naturally carbonate the beer as well to make sure it is in good standing for evaluation and ultimately packaging.
